Let’s make something good.

  1. Heat the oven to 425°F / 220°C. Scrub the vegetables and dry well.
  2. Toss carrots and potatoes with the oil, garlic, herbs, and a little seasoning. Spread in a single layer on a large tray.
  3. Roast for 30–35 minutes, turning halfway, until tender and golden around the edges.
  4. Taste, adjust the seasoning, and serve. Add a spoon of yogurt or a squeeze of citrus if you like.

Use what you have.

Try sweet potato or beets in place of some of the roots. Cut firmer vegetables a little smaller so everything cooks together.
